🇯🇲 PAN CHICKEN: Season the meat with jerk sauce and leave for 3 days. Prepare the jerk pan and place the seasoned meat above the fire. Turn after 5-8 minutes
🇯🇲 FESTIVAL: Mix together flour, cornmeal, salt, baking powder, water and sugar. Knead a little. Take a piece of dough and roll it into your hand, making an oval shape. Fry until golden brown

🇯🇲 WHOLE JERK UNDERGROUND HOG: Clean the whole hog. place it on a flat surface and then season with store-bought dry rub (dry jerk rub). Add another dry jerk rub (his secret recipe- he calls it cocoa butter). Leave it to marinate for a few minutes. Add sugar to make sure the skin gets crispy with a sweet taste. Place in the underground oven with pimento leaves.

  4. Jerk was my intro to Jamaican cuisine and it was made from scratch at a restaurant I worked at. Its all the love added with those ingredients that makes it's so good, but man that stuff was my go to. My 4 years there I ate it every shift on something. Much respect to my fellow Chefs, cooks, and everyone involved in the culinary industry down in Jamaica, lovely culture and beautiful people, many friends here in the states that I have are 2nd generation Americans from Jamaica, I love them so much man, lovely people for real

  5. If you try cooking it like lechon in Philippines it will be more delicious no burnt skin in lechon plus you're own seasonings.. try lechon philippines Jamaican. Rasta faray.. Philippines like weeds but government probihited marijuana
