  2. Quite impressed to see you can eat shrimp paste as it is very smelly and even some vietnamese are afraid of. Next time you visit Vietnam have a try on green papaya salad with beef jerky and minced herbs. It's not a meal but a snack. Thank you for enjoying my country's food.

  3. The chair only restaurant, i'm afraid after covid, will have to add tables too to maintain social distancing, can't clutter it any more.

  5. The fermented shrimp (or crab or fish) paste is packed full of umami. You find it as an accompaniment to some soups as well. Inside the fried balls are sweetened mung beans. Sometimes you see these coated with sesame seeds as well. Greasy and addicting.

  9. I'm stuck in Bremen now and I'm really dying to eat some good Vietnamese food (and of course there is none here).

  10. The word 'Banh' more or less can be translated to 'cake' but it actually refers to most things made from flour as a base for the food. For example, Bánh bao (big pork bun), a dish that is appropriated from a Guangzhou dim sum dish (大包) or Bánh mì (the famous french influenced baguette type sandwich with pork and pate and salad). I love Banh dishes a lot and the Vietnamese have combined the idea of sandwich, pastry, lunch, dessert, everything and anything into one delicious amazing bite. So awesome and proud sometimes to be from South-east Asia.
